Amy's Shrimp Lasagna

Ingredients:

  1. 6 - uncooked lasagna noodles
  2. 3 tablespoons - butter
  3. 1/4 cups - flour
  4. 1/4 cups - sliced green onions
  5. 1/4 teaspoons - salt
  6. 1/4 teaspoons - dry mustard
  7. 1/4 teaspoons - thyme leaves
  8. 1/8 teaspoons - cayenne pepper
  9. 2 1/2 cups - milk
  10. 4 ounces - shredded Monterey Jack cheese
  11. 16 ounces - fresh frozen cut broccoli (cooked crisp tender)
  12. 10 ounces - shredded Cheddar cheese (2-1/2 cups)
  13. 1 pounds - fresh medium cooked shrimp, shelled and deveined

Directions:

Cook noodles; drain.

Melt butter over medium heat and add flour, onions, salt, mustard, thyme, cayenne and milk. Cook and stir constantly until boiling and the sauce thickens. Reduce to low heat. Add Jack cheese, and cook for 1 minute, stirring constantly until melted.

In a 13-x-9-inch baking pan, layer 1/2 cup sauce, 3 noodles, all of the broccoli, and 1/2 cup Cheddar. Next, layer 1 cup sauce and top with remaining noodles, all of the shrimp and 1 cup Cheddar. Then add the remaining sauce and cheese.

Bake at 350° F for 30 minutes.
