    Letting the garlic and onion sit after chopping allows it to develop health promoting compounds such as allicin. Because the ingredients are hot when you blend this if you’re using a traditional blender it’s a good idea to cover the lid with a kitchen towel for safety.

Ingredients:

  1. 1/4 cups - Onion Chopped Nutritional YeastNutritional Yeast
  2. 2 cloves - Garlic Chopped (or 1/2 tsp. Garlic powder)
  3. 200 grams - Cauliflower Chopped small (about 2cups)
  4. 1/2 teaspoons - Salt
  5. 2 tablespoons - Oil
  6. 1 1/2 cups - Plant based milk
  7. 2 teaspoons - Dijon mustard
  8. 1 tablespoons - Lemon juice
  9. 1/2 teaspoons - Black Pepper
  10. 1/2 teaspoons - Oregano
  11. 1/2 teaspoons - Rosemary
  12. 1/2 cups - Nutritional Yeast

Directions:

Mince garlic and chop onion first. Allow to sit for 10 to 15 minutes while you prepare the other ingredients. Put all ingredients in a pot and bring to a boil then turn heat down, cover and simmer for 15 minutes. Cauliflower should be very soft at this point. Carefully transfer all to a blender or optionally use an immersion blender to purée the sauce. Serve over your choice of pasta, steamed vegetables and or cooked whole grains.
