The salted chopped peanuts and sprinklers are optional as toppings, but the peanut butter balls are still great without toppings.

Ingredients:
- 2 cups - crunchy peanut butter
- 1/2 cups - butter (1 stick = 1/2 cup) softened
- 3 cups - powdered sugar
- 1 teaspoons - vanilla extract
- 2 cups - crispy rice cereal
- 16 ounces - chocolate candy coating (CandiQuick)
- 1/4 cups - chopped salted peanuts optional
- - sprinkles optional
Directions:
Combine peanut butter and butter together in a large mixing bowl and mix well.
Stir in vanilla.
Gradually add in powdered sugar, half a cup at a time until mixture is smooth and you can easily form balls. Stir in crispy rice cereal.
Shape into 1 inch balls and refrigerate for 30 minutes on a wax-lined baking sheet (or in freezer for 20 minutes).
Dip the peanut butter balls into the melted chocolate.
Transfer to wax paper and, if using sprinkles or chopped peanuts, sprinkle those on immediately after dipping. Let candy stand until the chocolate is firm (if using toppings).
Store in an airtight container in the fridge.
