Mini Meatloaves with Veggies

Ingredients:

  1. 2 pounds - grass-fed beef or pork
  2. 1 1/2 teaspoons - sea salt
  3. 1 teaspoons - ground black pepper
  4. 2 - large pastured eggs
  5. 1 - medium onion peeled, finely chopped
  6. 2 cups - mushrooms finely chopped
  7. 1/2 cups - chopped or grated carrots
  8. 2 cups - loosely packed spinach finely chopped
  9. 1 teaspoons - dry thyme
  10. 3 cloves - garlic peeled, minced
  11. 1 1/2 tablespoons - Dijon mustard

Directions:

Preheat oven to 350 degrees F.

In a large bowl, combine all of the ingredients above, and mix well until everything is blended together evenly.

Divide meat mixture evenly into 12-count muffin tin.

Bake for 25 to 30 minutes or until meat is cooked through.

Leftovers can be frozen or stored in fridge for up to 5 days.
