Grilled Corn with Chipotle Chile Butter

Ingredients:

  1. - olive oil
  2. 4 ears - corn husks removed
  3. 5 tablespoons - butter softened
  4. - 1 to 2 dried chipotle chiles rehydrated and finely chopped
  5. 2 tablespoons - chopped cilantro
  6. 4 tablespoons - crumbled Lancashire or Cotija cheese
  7. - sea salt
  8. - black pepper freshly ground
  9. - lime wedges for serving

Directions:

1. Toss corn in olive oil. Season with salt and pepper and grill over medium heat, rotating every 5 minutes, to obtain a nice char on all sides.

2. Meanwhile, mix together butter, chiles, cilantro and a little salt and pepper.

3. Once corn is cooked, remove and cover with knobs of chipotle butter, allowing it to melt over corn. Sprinkle with cheese and serve with wedges of lime.
