Zucchini bread freezes really well. Wrap in foil.

Ingredients:
- 1 cups - Oil
- 2 cups - Sugar
- 3 - Eggs
- 2 teaspoons - Vanilla
- 1 1/2 teaspoons - Cinnamon
- 3/4 teaspoons - Nutmeg
- 1/4 teaspoons - Baking powder
- 8 ounces - Crushed pineapple 1 can
- 3 cups - Flour
- 2 teaspoons - Baking soda
- 2 cups - Unpeeled Zucchini shredded
- 1 cups - Dates chopped
- 1 cups - Pecans chopped
Directions:
Beat oil, sugar, eggs and vanilla until thick. Add spices, baking powder, baking soda and flour. Add pineapple. Mix well. Lastly, add dates, nuts and zucchini.
Use 2 greased 9x5x3 bread pans. Bake 350° for 1 hour.
