Oven Roasted Carrots

  1. 1 pounds - large carrots cut diagonally into 2-inch pieces
  2. 1/4 cups - extra virgin olive oil
  3. - salt and pepper to taste
  4. 2 tablespoons - fresh parsley chopped


Preheat oven to 450 degrees F. Toss carrots with olive oil and salt and pepper, until coated, and place on a foil-lined baking pan.
Bake carrots for about 20 minutes or until carrots are tender and slightly golden in color.
Place carrots in a serving bowl and garnish with chopped parsley.
