Ingredients:
- For the Fish
- 2 - fillets red snapper (best with skin-on for grilling)
- 2 tablespoons - olive oil
- For Cajun Spice Mix
- 1 tablespoons - paprika
- 1 teaspoons - garlic powder
- 1 teaspoons - kosher salt
- 1 teaspoons - onion powder
- 1 teaspoons - dried oregano
- 1 teaspoons - dried thyme
- 1/4 teaspoons - cayenne pepper (adjust to taste)
- 1/2 teaspoons - ground black pepper
- For Garnishing
- 2 - wedges of lemon
- 2 tablespoons - chopped parsley
Directions:
Thaw frozen snapper completely and pat dry.
Preheat the grill to medium-high heat.
Brush both sides of the snapper fillets with olive oil.
Mix the Cajun spice blend in a small bowl and rub evenly across the fillets.
Place the fillets skin-side down on the grill and cover. Grill for 6-8 minutes.
Flip the fillets carefully and grill for another 2 minutes until cooked through.
Serve hot, garnished with lemon wedges and chopped parsley.
