    Put on a pot of rice before you start this dish. By the time the rice is done, the chicken will be done too and you'll have a complete meal! You can play with this recipe ALOT--more or less chicken, or even another kind of meat; more or less vegetables is fine; you can even change the juice if you want a different flavor. If all you have in the fridge is onion and carrots, this dish will be great!

Ingredients:

  1. 1 pounds - boneless/skinless chicken thigh or breast cut in bite-sized pieces
  2. 1/3 cups - flour place in a bowl or bag
  3. 1 tablespoons - vegetable oil
  4. 1 cups - orange or pineapple juice
  5. 1/4 cups - honey
  6. 1/4 cups - low-sodium soy sauce
  7. 1 teaspoons - ground ginger
  8. 1 teaspoons - garlic powder
  9. 1 - small onion cut in small wedges
  10. 1 cups - other veggies you like cut in small/thin pieces to stir fry

Directions:

Toss the chicken in flour until completely coated. Heat oil on med-high heat and cook the chicken until browned all over. While cooking, mix the juice, honey, soy sauce, ginger and garlic. Add the vegetables to the chicken and stir frequently while cooking for a minute. Add the sauce and boil for two minutes to thicken sauce and cook chicken and vegetables. If you like a thicker sauce, whisk in 1 tablespoon cornstarch.
