Creamy Cream-free Chicken or Vegetable Soup

Ingredients:

  1. - Whatever you like for stew or soup! Here is a recipe for chicken stew with herbs:
  2. 3 cups - diced peeled potatoes
  3. 3 - large carrots, cut into chunks
  4. 3 - large celery stalks, cut into chunks
  5. 1 - medium onion, chopped
  6. 2 teaspoons - minced garlic
  7. 1 teaspoons - ground sage
  8. 1 teaspoons - thyme
  9. 1/2 teaspoons - dried basil
  10. 1 teaspoons - kosher salt
  11. 1/4 teaspoons - black pepper
  12. 3 cups - chicken (or vegetable) broth
  13. 1 pounds - chicken (optional)

  25. 3 cups - chicken (or vegetable) broth
  26. 1 pounds - chicken (optional)

Directions:

1. Add all ingredients to a slow cooker, pressure cooker, or large pot on stove.

2. Cook until the meat (or potatoes/root veggies, if you’ve left out meat) is done.

3. (Here's the magic:) Ladle 2 cups of veggies and broth into a blender (or separate bowl, if you have an immersion blender). Avoid ladling the meat. Puree.

4. Stir the pureed soup back into the main pot. Season to taste and serve!
