Broccoli Cheese Soup

Ingredients:

  1. 2 heads - broccoli chopped
  2. 1/4 cups - butter
  3. 1/4 cups - flour
  4. 1/2 - onion diced
  5. 2 cups - half-and-half
  6. 2 cups - veggie or chicken stock
  7. 2 teaspoons - salt
  8. 1 teaspoons - pepper
  9. 1/4 teaspoons - nutmeg
  10. 1/2 cups - carrots shredded
  11. 2 cups - cheddar cheese shredded

Directions:

Trim stems off of broccoli heads and chop into small florets.

In a large pot, combine butter and onion and saute until translucent.

Add flour and stir on medium heat until mixture lightly browns.

Stir in the half-and-half and mix until contents reach a simmer.

Add the veggie or chicken stock and simmer on low heat for 5-10 minutes.

Mix in the broccoli, carrots, salt, pepper, and nutmeg. Simmer on low heat for 10-15 minutes.

Add the cheddar cheese and stir until cheese is melted and combines with other ingredients.
