Basil Pesto and Mushrooms with Pasta

Ingredients:

  1. - olive oil as needed
  2. - sea salt & fresh black pepper as needed
  3. - crushed red pepper as needed
  4. 10 ounces - linguine pasta cooked al dente
  5. 7 ounces - baby arugula and/or spinach leaves
  6. 1 1/4 cups - basil pesto
  7. 10 ounces - bella mushrooms thinly sliced
  8. - grated parmesan cheese as needed

Directions:

Lightly toss the first seven ingredients together.
When plating or packing for lunch, place pasta in a bowl or plate; garnish with extra mushroom slices, grated Parmesan cheese, sea salt, fresh black pepper, and with a light drizzle of olive oil.
