Aunt Patty's Lentil Soup

Ingredients:

  1. 2 1/3 cups - dry lentils (1 pound)
  2. 8 cups - cold water
  3. 1 cans - 16 oz. diced tomatoes
  4. 2 slices - bacon, cut up
  5. 1 - medium onion, chopped (1/2 cup)
  6. 1 - medium carrot, chopped (1/2 cup)
  7. 3 tablespoons - snipped parsley
  8. 2 tablespoons - wine vinegar
  9. 1 cloves - garlic, minced
  10. 2 1/2 teaspoons - salt
  11. 1/2 teaspoons - dried oregano, crushed
  12. 1/4 teaspoons - black pepper

Directions:

Rinse lentils.

In a Dutch oven combine all ingredients.

Bring to boiling; reduce heat. Cover; simmer for 45 minutes.
