Honey …. Mmmm, sweet, gooey, delectable honey!  Besides having such a wonderfully satisfying taste, it is beneficial to our health.  With its anti-bacterial and antioxidant properties, it is helpful in maintaining good digestion and aids our bodies in fighting disease.  Honey also has small amounts of several minerals and vitamins including vitamin C, calcium, and iron.  Here are a few handy honey tips for incorporating honey into your regular eating habits:

1.  Mix a tablespoon of honey with the juice of half a lemon into a glass of warm water in the morning for a healthy fresh start to your day.

2.  Since honey is sweeter than sugar, when baking, replace each cup of sugar with one cup of honey, unless there is more than one cup of sugar (then substitute about 3/4 cup of honey for each cup of sugar); additionally, reduce any liquid in the recipe by 1/4 cup for each cup of honey added.  Lastly, add 1/4 teaspoon of baking soda to the recipe per cup of honey to increase the volume of the baked product.

3.  Use honey in salad dressing, where honey helps bind together ingredients in addition to providing added thickness to the mixture.

4.  One 12-ounce jar of honey is equal to one cup of honey.

5.  To prevent a sticky mess when measuring honey, cover the inside of the measuring cup with a smidgen of oil or nonstick spray first.

6.  Add a little honey to your favorite mint or herbal tea for a healthy boost to your drink.

7.  When cleaning up sticky honey spots left on a shelf or counter, sprinkle some baking soda on the residue and top with a paper towel soaked in hot water; let sit for a few seconds before using a spatula to scrape up and remove the “sticky stuff”.

8.  Mix a little honey with your favorite butter or nut butter and use for a sweet healthy spread on toast, muffins, and bread.

9.  Substitute honey as a sweetener in your next bowl of cereal or yogurt.

10.  When serving a cheese platter, consider using a small bowl filled with honey for drizzling over the cheese (and crackers).
