Zucchini Pasta & Tomato-Pesto Sauce Tell a Friend

Ingredients:

  • 2 - large zucchini
  • 2 - or 3 large tomatoes
  • 3 cloves - garlic , peeled
  • - handful of fresh basil
  • 1/2 cups - pine nuts or walnuts
  • 1/4 cups - nutritional yeast
  • 1/4 cups - up to 1/2 cup extra-virgin olive oil
  • - sea salt and pepper, to taste
  • Directions:

    1. With a mandolin or spiral slicer, slice zucchini into thin pasta-like ribbons. Set aside.

    2. Put remaining ingredients into food processor and pulse until thoroughly combined. Toss with zucchini and enjoy.
