Zucchini Lemon Soup with Rice Tell a Friend

Ingredients:

  • 1 - onion, sliced thin
  • 2 tablespoons - butter
  • 1 1/4 pounds - zucchini, chopped
  • 1 tablespoons - fresh parsley
  • - salt and white pepper, to taste
  • 1/2 cups - light cream
  • 2 tablespoons - grated lemon rind
  • 5 tablespoons - lemon juice
  • 1 tablespoons - chervil
  • 4 tablespoons - long grain rice, cooked, for serving
  • Directions:

    Saute onion in butter; add zucchini, parsley, salt and pepper. Add 6 cups cold water, cover, and cook for 15 minutes.

    Cool and puree. Add remaining ingredients; simmer.

    Serve over rice.
