Ingredients:

  • 2 cups - all-purpose flour (not self-rising), sifted
  • 3 teaspoons - cinnamon
  • 1 teaspoons - salt
  • 1 teaspoons - baking soda
  • 3 - eggs
  • 1 cups - vegetable oil
  • 2 cups - sugar
  • 3 teaspoons - vanilla
  • 2 cups - grated zucchini, seeds and skins removed
  • - chopped nuts, optional
  • Directions:

    Sift together the flour, salt, baking soda, and cinnamon.

    Mix together eggs, oil, sugar, and vanilla in a different bowl; beat well with mixer.

    Add flour mixture to egg mixture, and beat again.

    Stir in zucchini and chopped nuts (optional).

    Pour into greased pan, and bake at 325 degrees F for 1 hour.
