  • 3 - eggs
  • 1 cups - sugar
  • 1 cups - Hain's "All Blend Oil" (safflower, soy, peanut & walnut)
  • 2 cups - grated zucchini, full cups
  • 3 cups - all-purpose flour (or soy with mixed flours, such as barley)
  • 1 teaspoons - vanilla
  • 1 teaspoons - baking soda
  • 1 teaspoons - baking powder
  • 1 teaspoons - salt
  • 1 teaspoons - cinnamon
  • 1 cups - nuts (English walnuts)
  • Directions:

    Beat eggs until light and fluffy. Add sugar, vanilla and oil. Blend well.

    Stir in the zucchini. In a separate bowl, sift together the flour, baking powder, baking soda, salt and cinnamon. Blend into creamed mixture.

    Fold in the nuts.

    Bake in two greased, floured 9-by-5-inch loaf pans at 350 degrees F for 1 hour.

    If not used at once, wrap in foil and freeze. When ready to use, reheat before serving.
