  • 2 whole - Medium Zucchini
  • 2 tablespoons - Bacon Drippings or Oil
  • 16 - Corn Kernels
  • 1 whole - Small Onion, diced
  • Directions:

    Wash zucchini thoroughly and dice. Do not peel.

    Heat bacon drippings or oil in large skillet. Simmer zucchini, corn, and onions in covered skillet over low heat for 15-20 minutes, or until tender and lightly browned.

    Serve hot with tortillas.
