Yam Pecan Pie Tell a Friend

Ingredients:

Praline Layer
  • 1 cups - pecan halves, chopped
  • 1/2 cups - (1 stick) butter
  • 2/3 cups - dark brown sugar
  • Filling
  • 1 pounds - yams, baked
  • 1 cups - half and half
  • 2/3 cups - golden brown sugar
  • 3 - large eggs
  • 1 teaspoons - cinnamon
  • 1 teaspoons - ground ginger
  • 1/4 teaspoons - salt
  • 1 - flaky pastry shell
  • Topping
  • 2 cups - pecan halves
  • 2/3 cups - dark brown sugar
  • 1/4 cups - butter, at room temperature
  • - whipped cream, for serving
  • Directions:

    Praline Layer:
    Melt butter in sauce pan, add pecans and sugar. Bring to a boil; stir until sugar dissolves. Cool. Spread on pie crust.

    Filling:
    Process yams in processor with spices. Spread yams over praline layer and bake 40 minutes.

    Topping:
    Blend 1 cup of chopped pecans with sugar and butter. Stir in remaining cup of pecans. Sprinkle topping over pie, return to oven, and bake 15 to 20 minutes.

    Serve at room temperature with whipped cream.
