Wild Texas Shrimp Saute over Rice Tell a Friend

Ingredients:

  • 1 1/2 pounds - Wild Texas Shrimp
  • 2 tablespoons - HEB Basting Oil or Olive oil
  • 1 tablespoons - Adams Reserve Southwest Rub
  • 2 cloves - Garlic, Crushed or minced
  • 1 cups - HEB Roasted Red and Yellow Peppers, Drained & chopped*
  • 1/4 cups - Fresh cilantro, Chopped
  • 1 bags - 16-oz. Frozen HEB Poblano & Corn Steamable Rice
  • 1 tablespoons - Fresh lemon juice
  • - Feta or white Mexican cheese, Crumbled
  • Directions:

    1. Peel and devein shrimp. Toss with oil, Southwest rub and garlic. Set aside for 5 min.
    In the meantime, cook rice according to package directions and set aside.
    2. Heat a large, non-stick skillet over Medium-High heat until very hot. Add shrimp; saute 3 min., scooping and turning continuously, or until shrimp begins to curl. Stir in roasted peppers and cilantro. Remove from heat.
    3. Spoon mixture over rice and squeeze about 1 T. lemon juice over shrimp mixture; top w/ crumbled feta or white Mexican cheese and serve.
