Whole Foods Couscous Cranberry & Pecan Tell a Friend

Ingredients:

  • 2 cups - Israeli couscous
  • 1 cups - Dried cranberries
  • 1 cups - Toasted pecans
  • 2 - Scallions, minced
  • 3 tablespoons - Canola oil
  • 1 1/2 tablespoons - Champagne vinegar, or white wine vinegar
  • 1 - Orange zest
  • 1/2 - Orange, juiced
  • 1/2 teaspoons - Tumeric
  • 1/2 teaspoons - Dried thyme
  • 1/2 teaspoons - Dried tarragon
  • - Salt, to taste
  • - Pepper, to taste
  • Directions:

    1. Boil couscous (8-10 minutes), drain but don't rinse.
    2. In small bowl, mix canola oil, OJ, vinegar, orange zest and spices.
    3. Combine the couscous, pecans, cranberries, scallions and mix with dressing.
    4. Chill and serve.
