Watermelon, Arugula, and Pistachio Salad Tell a Friend

Ingredients:

  • 1 pounds - watermelon, seeded & cut into bite size balls or thin slices
  • 1 tablespoons - pure maple syrup
  • 2 teaspoons - sherry or white wine vinegar
  • 1 tablespoons - chopped fresh basil
  • 1/2 cups - salted pistachios
  • 5 ounces - baby arugula
  • Directions:

    Seed 1 lb watermelon and cut into bite-size balls or thin slices. Whisk together 1 Tbsp pure maple syrup, 2 tsp sherry or white wine vinegar, and 1 Tbsp chopped fresh basil in large bowl. Add melon, ½ cup salted pistachios, and 5 oz baby arugula. Toss gently and serve immediately.
