  • 1 pounds - lean ground beef or turkey, 95% fat free
  • 1 pounds - sliced fresh mushrooms
  • 1 - medium onion, chopped
  • 12 ounces - whole wheat wagon wheel pasta, cooked, drained
  • 1/3 cups - grated Parmesan cheese
  • 1 - large green pepper, thinly sliced
  • 1 jars - meatless pasta sauce, 26 oz.
  • 1 cups - shredded part-skim mozzarella cheese, 4 oz.
  • - cooking spray
  • Directions:

    In a large non-stick skillet, cook the beef, mushrooms, and onion over medium heat until meat is no longer pink (can use cooking spray in skillet, if needed). Drain any fat.

    In a shallow 3-quart baking dish coated with cooking spray, layer the pasta, Parmesan cheese, green pepper, beef mixture and spaghetti sauce.

    Cover and bake at 350° F for 30 minutes. Uncover and sprinkle with mozzarella cheese. Bake 10 minutes longer or until cheese is melted.

    Let stand for 10 minutes before serving!
