Ingredients:

  • 4 pieces - Bread slices
  • 6 leaves - Lettuce
  • 3/4 cups - Hummus
  • 1/2 cups - Sprouts
  • 10 pieces - Baby carrots-sliced
  • 1 pieces - Red bell peppers
  • 6 slices - Tomatoes
  • 1 pieces - Apple
  • 1/2 pieces - Red onion
  • 1 teaspoons - Pumpkin seeds
  • 1/2 pieces - Cucumber
  • 1 tablespoons - Olive oil ( extra virgin)
  • - Pepper and salt to taste
  • Directions:

    1. Chop or grate all vegetables
    2. Combine vegetables and add pumpkin seeds, hummus, and olive oil.
    3. Mix well and season with pepper and salt.
    4. Apply the mix on slices of bread and serve as a sandwich.

    The vegan version of the vegetable sandwich is amazingly healthy. It is minus any dairy or animal products. There is no need to use faux meta products to make a delicious veg sandwich that could appeal to even non-vegetarians. In place of meat substitutes is fresh garden produce. It helps save money as it uses only readily available ingredients.
