Vegetable Beef Soup Tell a Friend

  • 1 pounds - cooked ground beef
  • 3 cups - frozen mixed vegetables (OR 1 can each of carrots, corn and green beans)
  • 1 - medium chopped onion
  • 15 - tomato sauce
  • 2 cups - beef broth
  • - salt and pepper
  • 1 tablespoons - oregano
  • 1 teaspoons - basil
  • 2 - bay leaves
  • 1 dashes - red pepper flakes
  • - sour cream, diced green onion, or Parmesan cheese
  • - crackers or sourdough bread, for serving with
  • Directions:

    In a large soup pot, cook ground beef until almost completely browned; add frozen vegetables and chopped onion and continue cooking until vegetables are crisp-tender.

    Stir in the beef broth, tomato sauce and seasonings, and cook over medium heat until cooked through.

    Serve soup with a dollop of sour cream and diced green onions or a spoon of Parmesan cheese and your favorite crackers or sourdough bread.
