  • 2 - bell peppers, small
  • 1 - carrot, medium
  • 1 - tomato, medium
  • 2 cloves - garlic, minced
  • 1 - onion, chopped
  • 2 tablespoons - chia seeds, or ground flax seeds
  • 1 - hot chili pepper
  • Spice Mix
  • 1/2 tablespoons - onion powder
  • 1/2 tablespoons - garlic powder
  • 2 teaspoons - dry oregano
  • 1 1/2 teaspoons - cumin
  • 1 teaspoons - smoked paprika
  • - salt and pepper, to taste
  • 12 - corn totrillas
  • 1 packages - shredded cheese
  • 1 cans - enchilada sauce
