Veal Marengo Tell a Friend

Ingredients:

  • 2 pounds - Veal for stew, Cut into 1-in cubes
  • 1/4 cups - All-purpose flour
  • 1 1/2 teaspoons - Salt
  • 1/4 teaspoons - Pepper
  • 1/2 teaspoons - Dried tarragon, Crumbled
  • 1/4 cups - Extra-virgin olive oil
  • 2/3 cups - Dry white wine
  • 1 cans - 1-lb. Tomatoes
  • 1/2 teaspoons - Sugar
  • 1/8 teaspoons - Garlic powder
  • 1 cans - Sliced mushrooms (3-4 oz.)
  • 1/4 cups - Frozen chopped onions
  • 2 tablespoons - Parsley, Chopped
  • - Hot, buttered noodles
  • Directions:

    1. Shake veal cubes in paper bag w/ flour, salt, pepper and tarragon.

    2. Brown veal in hot oil in large skillet; stir in any remaining flour mixture. Stir in wine; cook, stirring constantly, until sauce thickens and comes to a boil.

    3. Add tomatoes, sugar, garlic and mushrooms. Simmer, covered, 35 min. or until veal is tender.

    4. Thicken gravy, if desired by stirring in 1 T flour blended to smooth paste w/ 2 T water. Bring to a boil, stirring constantly.

    5. Add onion and parsley; heat thoroughly.

    6. Serve w/ hot, buttered noodles.
