Unstuffed Peppers Tell a Friend

Ingredients:

  • 1 lb. - Ground beef or mixture of beef and Italian sausage.
  • 1 small - onion, diced
  • 2 Cloves - Garlic , minced
  • 1 (14oz) can - crushed tomatoes
  • 1 (14 oz) can - diced tomatoes in juices
  • 1/2 C - long-grained white rice, uncooked, (or brown rice) or 3 C Cauli-rice
  • 1 2/3 C - water , or as needed (if using cauli-rice, youu0027ll need very little.
  • 1 Tbsp - Worcestershire sauce
  • 1/2 tsp. - Italian seasoning
  • - Salt u0026 Pepper to taste
  • 4 - Bell Peppers , any color, seeded and diced.
  • 1/2 C. - Mozzarella cheese, shredded
  • - Chopped Parsley for garnish
  • Directions:

    1. In a large Pan over medium heat, brown ground beef, onion and garlic, breaking up beef with a wooden spoon; Cook all the way through until no pink remains. Drain fat.

    2. Add tomatoes, rice, water, Worcestershire sauce, Italian seasoning, and salt pepper to taste. Bring to boil, reduce heat to simmer, cover and cook for 10 minutes.

    3. Stir in diced peppers (and if using rice, instead of Cauli-rice, cook for an additional 15 to 20 minutes or until rice is tender.) Stir, then spread shredded cheese on top. Remove from heat, cover and rest 10 minutes before sprinkling with parsley and serving.

    Notes

    NOTE: If using grain rice, Add water as needed until rice is tender. Race will continue to absorb liquid as the mixture rests.
