Ingredients:

  • 1 1/2 cups - cubed eggplant
  • 1 - small squash, diced
  • 1 cups - mushrooms, chopped
  • 1/2 - onion, sliced
  • 1 cans - tomatoes, 14 oz.
  • 1 cups - water or chicken stock made from bouillon cube
  • 1 1/2 cups - spinach
  • 1 tablespoons - Italian seasoning
  • 1 cloves - garlic, minced
  • Directions:

    Simmer everything together for about 30 minutes.

    If desired, add 1 level tablespoon of grated Parmesan at serving.
