Ingredients:

  • 1/3 cups - flour
  • 1/2 teaspoons - salt
  • 1/2 teaspoons - freshly ground pepper
  • 4 - turkey cutlets, sliced in half across grain
  • 2 tablespoons - olive oil
  • 1 cloves - garlic, minced
  • 1/2 cups - chicken stock
  • 1 tablespoons - capers
  • 1/2 teaspoons - sugar
  • 1 - lemon (juiced and grated zest)
  • 2 tablespoons - butter
  • 1 tablespoons - chopped parsley
  • - capers, for garnish
  • Directions:

    Combine flour, salt and pepper. Dredge cutlets in mixture.

    Saute cutlets in oil until golden brown (3 minutes per side); remove and reserve.

    Add garlic to pan, brown and add chicken stock. Add remaining ingredients and boil 1 minute.

    Return cutlets to pan and heat through. Garnish with capers.
