Tossed Antipasto Salad Tell a Friend

Ingredients:

  • 1 cups - bottled Italian dressing
  • 1 tablespoons - lemon juice
  • 1/2 teaspoons - salt
  • 1/4 teaspoons - freshly ground pepper
  • 1 - medium zucchini, sliced thinly
  • 1/2 - medium head cauliflower, broken into flowerets
  • 3 - to 4 large mushrooms, sliced
  • 2 - firm, ripe tomatoes, quartered
  • 6 - thin slices salami, cut in strips
  • 1/4 pounds - provolone cheese, cut in strips
  • 2 quarts - crisp salad greens
  • 1/4 cups - thinly sliced green onions
  • 1/2 cups - grated Parmesan cheese
  • 1 cups - garlic flavored croutons
  • Directions:

    Combine salad dressing, lemon juice and seasonings. Let stand at room temperature for 30 minutes.

    Pour dressing over zucchini and cauliflower; chill several hours. Drain and save marinade.

    Combine marinated vegetables, mushrooms, tomatoes, salami and provolone; toss with mixed greens.

    Sprinkle onions, parmesan and croutons on top. Add dressing; toss.

    Brief Description

    Tossed salad greens with salami, provolone, cauliflower, zucchini, green onions, parmesan and Italian dressing; marinate vegetables overnight before assembling.
