  • 1/4 cups - water
  • 1 - medium tomato OR 1 can tomatoes, cut into fourths
  • 1 - small onion, cut into fourths
  • 1 cloves - garlic
  • 2 cans - 10.75 oz. condensed chicken broth
  • 1 - soup can of water
  • 1/4 teaspoons - ground coriander
  • 1/4 teaspoons - salt
  • 1/8 teaspoons - pepper
  • 1/2 teaspoons - cumin
  • - chopped jalapeno peppers, optional, for added spiciness
  • - fried tortilla strips or tortilla chips, for serving with
  • - shredded cheddar or Monterey Jack cheese, for serving with
  • Directions:

    Place water, tomato, onion and garlic in blender. Cover and blend on high until smooth.

    Pour into saucepan. Heat tomato mixture, chicken broth, 1 can of water and spices and boil for 15 to 20 minutes.

    Serve soup with fried corn tortilla strips or I use crumbled tortilla chips, and shredded cheddar or Monterey jack cheese.

    If you want it spicier, you can add a few chopped jalapeno peppers. Also I have used a can of tomatoes instead of a fresh one.
