Ingredients:

  • 1 pounds - Chicken, cubed
  • 40 ounces - Chicken Broth
  • 1/4 cups - oil
  • 1 - Purple Onion (large), chopped
  • 4 cloves - garlic, minced
  • 6 ribs - celery, minced
  • 2 - carrots, chopped
  • 1 teaspoons - cumin
  • 1 teaspoons - salt
  • 1 teaspoons - chili powder
  • 14 ounces - Ro-Tel (tomatoes & chiles)
  • 3 teaspoons - Chalula (like tabasco)
  • 4 teaspoons - cilantro, chopped
  • 9 - corn tortillas, cut into strips and fried
  • 2 - Avacado, sliced
  • - Monterrey Jack, shredded
  • Directions:

    Here we go! Boil the chicken in the broth. Saute onion, garlic, celery in oil until….well….sauteed. Add all the ingredients to the chicken, except the tortillas avacado and cheese, and simmer until the carrots are tender. Serve in a bowl and garnish with cheese and avacado and tortilla strips.
