Tomato Soup Tell a Friend

  • 2 pounds - roma tomatoes
  • - cooking spray
  • 1 - large onion, chopped
  • 2 cloves - garlic, minced
  • 2 cans - vegetable broth, 14.5 oz. each
  • 1 teaspoons - dried oregano
  • 1 teaspoons - dried basil
  • - salt and pepper, to taste
  • Directions:

    Clean tomatoes and put on a baking sheet. Spray with cooking spray and roast at 400 degrees for about 15 minutes. The tomato skin should be soft and beginning to peal.

    Sauté chopped onions and garlic in cooking spray in a large saucepan with one can of vegetable stock. Cover and cook for 10 minutes.

    Peel and chop tomatoes and add to mixture with other can of vegetable stock and seasonings. Simmer for 20 minutes.

    Use a hand blender or food processor and puree soup. Return to pan; serve.

    Can top with fresh basil, if desired.
