Tomato, Avocado & Corn Relish Tell a Friend

  • 1 pints - Cherry or grape tomatoes, Quartered
  • 2 cups - Fresh or frozen corn kernels, Thawed, if frozen
  • 1 whole - Large (or 2 sm.) avocados, Diced
  • 2 tablespoons - Extra virgin olive oil
  • 1 tablespoons - (or more) Fresh lime juice, to taste
  • 1/2 cups - Red onion, Finely chopped
  • 1/4 cans - Fresh cilantro leaves, Chopped
  • - Salt, to taste
  • - Pepper, to taste
  • Directions:

    1. Quarter cherry tomatoes & place in lrg. bowl. Add corn. Peel and dice avocados. Add to veggies in bowl.

    2. Add oil & lime juice, according to taste; toss gently to coat. Season w/ salt & pepper. Set aside briefly (or refrigerate) to allow flavors to mingle.

    3. Meanwhile, chop onion & cilantro; stir gently into avocado mixture.

    Serve chilled or at room temperature.
