  • 3 bags - posole (frozen or dried)
  • 3 packages - onion soup mix
  • 4 pounds - pork, finely cubed
  • 1/2 jars - minced garlic
  • 5 cans - green chili enchilada sauce
  • - warm tortillas, for serving with
  • Directions:

    Soak the posole overnight in a large stainless steel pot.

    Add the onion soup and cook together until tender.

    Fry pork in bacon fat in large pot until brown; add garlic and green chili enchilada sauce. Simmer for 1 hour until meat is tender.

    Then add soup/posole mixture to pork mixture.

    Serve hot with warm tortillas.
