Thai Broccoli Salad and Dressing Tell a Friend

Ingredients:

Salad
  • 1 packages - broccoli slaw, found in vegetable dept. at grocery store
  • 1 - fresh serrano pepper, sliced in tiny rings, very thin
  • 1 cups - chopped fresh cilantro leaves
  • 6 - green onions, chopped tiny
  • 16 - peanuts or soy nuts, chopped, toss in right before serving
  • Dressing
  • 1 tablespoons - olive oil
  • 6 tablespoons - balsamic vinegar
  • 1 packages - Sweet & Low
  • 1 tablespoons - kosher salt, coarse salt
  • 1 tablespoons - fresh minced ginger root
  • 2 cloves - garlic, minced
  • 1 - serrano pepper, seeded, minced
  • Directions:

    Prepare dressing and toss with the above ingredients except for peanuts. Chill.

    Toss in peanuts right before serving. Keeps very well.
