Ingredients:

  • - black-eyed peas, cooked, drained, rinsed
  • - jalapenos, roasted, and skin removed
  • - tomatoes, chopped
  • - green peppers, chopped
  • - yellow onion, chopped
  • - Garlic cloves, minced
  • - fresh cilantro
  • - fresh lime juice
  • - salt and pepper
  • Directions:

    Jalapenos - after roasting, put in a baggie to sweat them. This process makes it easier to take the skin off. Don't rinse the charred peppers under water; all your flavor will go with it.

    Chop the peppers along with all the other ingredients and add to peas. Sprinkle with salt and pepper; pour lime juice over.
