Tangy Carrot Salad Tell a Friend

Ingredients:

  • 2 pounds - Carrots, sliced
  • 1 - Onion, diced
  • 1 - Green Pepper, diced
  • 8 ounces - Tomato Sauce
  • 2 tablespoons - Olive Oil
  • 1/3 cups - Vinegar
  • 1/2 teaspoons - Sea Salt
  • 1/2 teaspoons - Black Pepper
  • 1/2 teaspoons - Dry Mustard
  • 1/3 cups - Sugar, Optional
  • Directions:

    Slice and steam the carrots for 8 to 10 minutes being cautious not to overcook. Drain them and place in a bowl, add diced onion and green pepper. Bring the tomato sauce, olive oil, vinegar sugar, salt, pepper, and dry mustard to a boil. Turn the heat down and allow to reduce a bit then remove from heat and pour over the carrot mixture. Stir and chill before serving.

    Notes

    I'm not a fan of sugar so I leave it out entirely, use quite a bit less or substitute some honey for the sugar.
