Sweet Potato Fries Tell a Friend

  • 2 - medium sweet potatoes, peeled, cut into 1/2-inch thick fries
  • 3 tablespoons - or 4 tbsp coconut oil
  • - unrefined sea salt
  • - mild or sweet ground paprika
  • Directions:

    Preheat the oven to 410° F.

    Line a baking sheet with parchment paper. Toss sweet potato fries on the tray with coconut oil to coat (melt the oil first, if necessary). Arrange the fries so they are not overcrowded on the tray. Sprinkle generously with salt and dust with paprika.

    Bake for 10 minutes. Remove from oven; turn each piece over and return to oven. Bake for another 10-15 minutes, until golden on the outside and soft in the middle.
