Sweet Potato Casserole Tell a Friend

  • 7 - medium yams, cooked and mashed lightly
  • 1/2 cups - sugar
  • 3 - eggs, beaten
  • 1/2 cups - whipping cream (unwhipped)
  • 2 tablespoons - orange juice concentrate
  • 1/4 teaspoons - salt
  • 1/2 cups - butter
  • 2 teaspoons - vanilla extract
  • Topping
  • 1 cups - brown sugar
  • 2/3 cups - flour
  • 1/3 cups - butter
  • 3/4 cups - pecans
  • Directions:

    Mix together all of the casserole ingredients, then mix together the topping ingredients and sprinkle over the top.

    Brief Description

    An absolute requirement for Thanksgiving at our house. It's practically dessert, but we serve it with dinner anyway. Decadent and delightful.

    Since this is a long-standing family recipe, there isn't really a specific bake time or temperature. There isn't anything in it that needs to be cooked, exactly, so the only goal is to heat it all the way through. I would probably kick it up to 350˚ and bake it for 20 minutes or so, checking every so often to make sure it's heating properly. Just wing it. :)
