Sweet Beet Cookies Tell a Friend

  • 1 cups - flour
  • 1/2 teaspoons - baking powder
  • 2 tablespoons - sugar
  • 1/4 teaspoons - salt
  • 1/2 cups - raw beets
  • 2 tablespoons - vegetable oil
  • Directions:

    Preheat oven to 400.
    Combine the first 4 ingredients and stir.
    Using your hands, add shredded beets to the flour mixture until well coated.
    Add oil and work with your hands to bring dough together. This may take a few minutes. Knead well until smooth.
    Form dough into a flat rectangular disk and roll out to 1/2 inch thick.
    Use a knife to cut dough into squares or use small cookie cutters (the yield will vary depending on the size of the cookie cutters or squares.)
    Transfer to a non-stick baking sheet (or Silpat-lined).
    Bake 15-17 minutes.
    Cool and serve.
    Store in air-tight container.
