Sweet Balsamic Black Bean Salad Tell a Friend

Ingredients:

  • 1/2 cups - green bell pepper, chopped
  • 1/2 cups - yellow bell pepper, chopped
  • 1/2 cups - orange bell pepper, chopped
  • 1 cups - roasted red bell peppers, drained, chopped
  • 1 cans - black beans, 15 oz., drained, rinsed
  • 20 - halved grape tomatoes
  • 1 bags - mixed salad greens, rinsed, 1 lb.
  • Dressing
  • 2 tablespoons - fresh parsley, chopped
  • 1 teaspoons - minced garlic
  • 1 teaspoons - dried basil
  • 1 teaspoons - stevia
  • 1 tablespoons - Worcestershire sauce
  • 3 tablespoons - balsamic vinegar
  • Directions:

    In a large bowl combine peppers, beans and tomatoes.

    Combine dressing ingredients in a jar. Shake well. Pour over vegetables and gently toss.

    Cover and refrigerate at least two hours (overnight is better!).

    To serve, place mixed greens on salad plates and top with pepper/bean mixture. Enjoy!
