Sweet and Sour Chicken Tell a Friend

  • 6 - 5 oz. skinless chicken breasts
  • 6 - green onions, finely sliced
  • 2 cloves - garlic, finely chopped
  • - salt and pepper
  • 3 tablespoons - light soy sauce
  • - PAM cooking spray
  • 1 tablespoons - dark soy sauce
  • 2 teaspoons - Stevia
  • 2 tablespoons - raspberry vinegar
  • 1 teaspoons - paprika
  • 1/2 teaspoons - Chinese 5 spice powder
  • 1/2 cups - sieved or crushed tomatoes
  • Directions:

    Slice the chicken very thinly and place in a shallow oven proof dish. Sprinkle over the green onions and garlic; season well and pour over the light soy sauce. Toss to mix well, cover and marinate in refrigerator for 30 minutes.

    Spray a large non-stick skillet with Pam cooking spray and when hot, add the chicken mixture and cook over high heat. Stir and cook for 5-6 minutes and then add dark soy sauce, Stevia, vinegar, paprika, Chinese 5 spice and sieved tomatoes. Stir to mix well and bring the mixture to a boil.

    Reduce the heat and cook gently for 3-4 minutes or until chicken is cooked through. Check the seasoning and serve immediately.
