  • 12 - frozen tortillas, thawed
  • 1 - medium onion, chopped
  • 1 tablespoons - oil
  • 1 cans - 20 oz. solid pack tomatoes
  • 1/2 cups - Summit Chablis
  • 1 teaspoons - oregano
  • - salt, to taste
  • 1/2 cups - Parmesan cheese, grated
  • 1/2 cups - Monterey Jack cheese, cubed
  • 1 pints - sour cream
  • 1 cups - mild cheddar cheese, grated
  • Directions:

    Arrange thawed tortillas in large casserole.

    Saute onions in hot oil. Add tomatoes, wine, oregano and salt. Simmer 15 minutes.

    Pour sauce over tortillas; add Parmesan and cubes of Monterey Jack evenly over top. Spread sour cream over all.

    Cover and bake at 350 degrees F for 30 minutes. Add cheddar and bake uncovered for 5 to 10 minutes longer.

    Tortillas baked in a casserole with sauteed onions, tomatoes and seasonings as well as Parmesan and Monterey Jack cheeses; topped with sour cream and cheddar.
