Summer Sandwiches Tell a Friend

  • - 6 to 8 slices fully cooked bacon, 4-6-oz. wafer-thin prosciutto slices can be substituted
  • 1 packages - (8-10 oz.) Fresh mozzarella cheese, Sliced
  • 4 - Fresh Ciabatta or French rolls
  • 1/2 cups - Central Market Pesto Genovese Tapenade, Or any brand of basil pesto
  • 1/4 cups - Olive-oil mayonnaise, Optional
  • 2 - small or 1 large ripe tomato, Thinly sliced
  • 1 bags - 6-oz. HEB Ready, Fresh, Go! Baby Spinach and Arugula
  • - Balsamic vinegar, optional, Drizzled over sliced tomatoes
  • Directions:

    1. If using bacon, heat in microwave according to package directions.
    2. Split rolls horizontally and toast briefly. Spread pesto thinly over cut sides of each roll. Spread mayo over pesto, if desired.
    3. Break bacon slices in half; divide bacon (or prosciutto) evenly over bottom halves of rolls.
    4. Layer sliced cheese and tomatoes over bacon or prosciutto. Drizzle balsamic vinegar (if using) over tomatoes and season them with salt. Add spinach and arugula; top w/ remaining rolls, press down gently and serve.
    5. Eat immediately, or wrap up.
