Summer Crab Cakes Tell a Friend

Ingredients:

  • 3 cups - saltine cracker crumbs, divided
  • 2 - large eggs, lightly beaten
  • 1/2 cups - diced onion
  • 3 tablespoons - mayonnaise
  • 1 tablespoons - prepared mustard
  • 2 teaspoons - lemon juice
  • 1/2 teaspoons - salt
  • 1/4 teaspoons - pepper
  • 1/8 teaspoons - ground red pepper
  • 1/4 teaspoons - hot sauce
  • 1 pounds - fresh lump crab meat, drained
  • 2 tablespoons - butter
  • 2 tablespoons - oil
  • Directions:

    Stir together 2 cups of cracker crumbs with the next 9 ingredients (everything but the crab meat, butter and oil). Fold in the crab meat.

    Shape into 16 small patties, and dredge them in the remaining cracker crumbs.

    Melt butter and oil in a large skillet over medium-high heat. Add crab patties; cook about 3 to 4 minutes on each side.
