Strawberry & Quinoa Salad with Toasted Almonds Tell a Friend

  • 2/3 cups - tricolor quinoa, rinsed and drained
  • 1 1/3 cups - water
  • 1 cups - strawberries, sliced
  • 3 tablespoons - toasted silved almonds
  • 2 - green onions, thinly sliced
  • Dressing
  • 2 tablespoons - fresh lemon juice
  • 2 tablespoons - extra-virgin olive oil
  • 2 teaspoons - agave nectar (or honey)
  • 1/4 teaspoons - salt
  • Directions:

    1. Combine the quinoa and water in a medium saucepan set over high heat. Bring to a boil, cover and reduce the heat to low. Cook until all of the water is absorbed, 18 to 20 minutes. Spread the quinoa on a baking sheet and let cool.
    3. Toss with the dressing. Serve.
    The dressing:
    1. In a small bowl, whisk together the lemon juice, olive oil, agave nectar and salt.
