Ingredients:

  • 1 kg - chicken drum and wings
  • - sea salt and black pepper
  • 1 tbles - olive oil
  • 1 - red onion
  • 3 - cloves garlic, minced
  • 1 cup - tomato sauce
  • 1/2 cup - whole grain mustard
  • 1/3 cup - runny honey
  • 2 tbles - brown sugar
  • 1 tbles - smoked paprika
  • 1 tps - cayenne pepper
  • 3 tbles - Worcester sauce
  • 3 tbles - balsamic vinegar
  • handful - each sesame seeds, finely sliced long green chilli, to garnish
  • - steamed basmati rice
  • Directions:

    Remove skin from chicken. Put in roasting pan.

    Make up sauce, sauté onion, garlic, etc. add in rest of sauces and spices. Cook 5 mins. Pour over chicken. Roast, basting often, for 1 and 1/4 hours

    Garnish with scattering of sesame seeds and chilli, serve on rice
